Our New Invention: Coconut Cream Pancakes!!!

Today, my mom invented a new delicious dish - Coconut Cream Pancakes!

Ingredients: Flour, Water, Coconut Cream, Oil, Sugar.

 All you do is simply mix the ingredients together...


And then cook it on the pan!

 Mmm... they tasted SOOOOOOOOO good!

 Enjoy! :)

It's been a while since I last posted on this blog (last post in 2020)! Time has flown by so quickly. For 2020, 2021, and 2022, our family has been blessed to do a fun summer road trip from CA to the east coast. We've been blessed to visit the OH Scriptorium, dear friends, and fun places along the way. This year, we weren't able to make it to the east coast again, but we are doing a short 1-week trip up to northern CA and Oregon.  My family and I were blessed to visit Lava Beds National Monument again! Mushpot is a beginner cave with paved paths and lighting inside. Grand Canyon (6/16)

Tuesday, June 16th 2020 We are in Arizona! We were so blessed to be able to visit the Grand Canyon! "O Lord, how manifold are Your works! In wisdom You have made them all. The earth is full of Your possessions—" -Psalm 104:26 My family at the Grand Canyon! Highlights from Lava Beds National Monument - part 2

On Thursday 6/29/2023, we visited Lava Beds National Monument again! We got to explore Hopkin's chocolate cave, Golden Dome cave, and Hercules' leg cave.  Enjoy these photos! Outside the caves, there was a sweet butterfly that kept flying around us. Then, it landed on Catherine's helmet and didn't want to leave. I was able to get some beautiful close-up pictures. Here we are outside Golden Dome cave!  Dad outside a cave (I think it's a different one from the one above. It's our car in the background, too!) I think this entrance is called the "headache" entrance or something like that. That is because the entrance is so narrow that people sometimes accidentally bump their head on the ledge! OC Fair 2023!

When my siblings and I were younger, our family would go to OC Fair every summer. We have great memories from the Centennial Farm and the Read & Ride program. The last time I went to OC Fair was before the COVID-19 pandemic.  This August 2023, my sisters and I and some friends went to the OC Fair together (the rest of the family wanted to come but weren't able to make it this time). The Lord was SO good to us. We got good parking, the weather was cool, the sky was cloudy, and we had an amazing and memorable time. Selfie at the OC Fair with my sisters! The flight to California

In the morning, a taxi drove us to the airport.  We went through security check, and walked to our boarding gate.  We would be flying on Asiana Airlines, and since my Dad was a diamond member, he could go the lounge for free.  He could also bring one person.  He wanted to bring my Mom, but it wouldn't be safe to leave all of us outside, so my older sister went with him.  The rest of us stayed at the boarding gate and reviewed/memorized our Bible Bee passages.  Below is my sister memorizing her early release passages. There are many planes going to and leaving the Beijing airport, so there is a lot of air traffic.  Most of the time, when we fly from Beijing, our airplane will be delayed, and once we missed our next flight because of the delays.  This time, the flight only delayed about thirty minutes, but after we boarded the plane, we had to wait some time before we could take off.  We ate an early dinner on the plane.  The choc...

Up in the air! Beijing to Vancouver...

We're up in the air again! This time, from Beijing to Vancouver (we'll be transferring there)! The wind was big and strong today, but the sky was blue and the clouds were white and puffy. We waited in the plane for a while, because it was not safe to fly in such a strong wind. Meanwhile, we were busy taking pictures! Freckles the bunny on the plane:  Anabel: As usual, there was a Safety Booklet that taught you about what to do in the case of an emergency. Also located in the pocket of the seat in front of you was a magazine: Air Canada's magazine. The magazine was mostly about duty-free items for sale, advertisements, and news articles, but there was also a fun puzzle inside! There was also a description of the planes in the Air Canada fleet. Pacific Science Center (Seattle)

My favorite part about Science Centers are the interactive displays.  The Pacific Science Center had lots of interactive, hands-on displays! We all had a great time at the Science Center. The Well-body Academy of Health and Wellness is an exhibit for kids that teaches you how to take care of your body and stay in good health. There are four areas in the Well-body exhibit: Food and Nutrition, Sleep, Exercise, and Hygiene. At the Food and Nutrition  area, we learned to eat healthy foods and the correct amount of Calories. In the Sleep  Exhibit, I learned that we need to sleep enough. Exercise is very important for health. Hygiene Let's go upstairs to the WELLBODY LOFT! Exercise well, Eat well, Sleep well, Wash well, and LIVE well! The Age Your Face  Display showed you the bad effects of smoking, UV exposure, and obesity on aging. Our trip to Sacramento

At around 5:30 in the morning on Monday, my Dad came into our room and woke us up.  We had everything for the trip prepared the night before, but we hadn't loaded everything into the car. There were also some food in the refrigerator that we needed to bring and many last-minute things we needed to do (like waking up my brother so he could prepare his things).  Around 6:00, we left the house.  In almost no time, the sun was up. Outside the window, the land was parched and dry, but the view was nice. The six of us were not the only ones traveling.  My younger siblings' stuffed animals were also riding on the car. About half-way through the trip, we stopped at a rest station.  We had stopped at this rest station before last year when we went on our road trip.
